chicken liver + red onions + fried egg (arab style)



short story:

liver is popular in the Middle East and a staple meal for most, including myself. There was nothing like coming home to the smell of my moms sauteed liver and onions after a long day at school. I could eat it morning, night, pretty much any time of the day.  As I got older, I started to learn more about nutrition dense liver is and how it improves our bodily functions.

why you should eat liver

  • high in vitamin A, folic acid, iron, and zinc
  • the most nutrient dense organ meat
  • it is a powerful source of vitamin A (beneficial for eye health and for reducing inflammation, including everything from Alzheimer's disease to arthritis)

Iron and Zinc
  • Iron enables your body to use oxygen efficiently and to make new red blood cells.
  • This mineral also plays a role in cell division and the health of your immune system. An iron deficiency can cause fatigue, decreased oxygen and a weakened immune system.
  • Healthy males need 8 milligrams of iron each day and healthy females need 18 milligrams. One chicken liver provides 5.12 milligrams of iron.
  • Zinc aids in wound healing, immune system function and cell division.
  • Adult males need 11 milligrams of zinc each day and females need 8 milligrams. One chicken liver contains 1.75 milligrams. 




  • 1 cup of chicken liver
  • 1/2 red onions
  • 7 tbs of oil
  • 1 tsp of black peppercorns
  • 1 fried egg (optional)
  • salt + pepper to taste 



Step 1
Chicken livers are pretty cheap, as far as meat goes, but they do require a little attention before they can be cooked to full potential. Wash them in cold water, then spread them out onto a cutting board. Remove and discard the connective vein. Then pat the livers dry on a paper towel, then continue with the recipe.
Step 2
In a large frying pan, heat 4 tablespoons of the oil over moderate heat. Add the onions and salt/pepper. Cook, stirring frequently, until the onions are well browned, about 7 minutes. Remove the onions from the pan and put on a serving platter or individual plates.

In the same frying pan, heat the remaining 3 tablespoon oil over moderately high heat. Put the livers in the pan and cook for 2 minutes. Turn and cook until browned, about 2 minutes longer. The livers should still be pink inside.

step 3    

Return the pan to the heat and add the egg. I like mine runny so no more than 4 minutes on moderately high heat. Top with the egg and more black pepper. 


Drizzle more olive oil and top with parsley (optional)
