Favorite Chicken Recipes

When it comes to meal prep or eating healthy for such a long time, the most common thing I hear from people is “I’m so tired of eating chicken”

 

For me, eating chicken repeatedly isn’t an issue simply because

1. It’s simple and budget friendly which allows me to remain consistent

2. I necessitate nutrition dense meals and chicken is a lean meat packed with protein. Here’s some of my favorite chicken recipes that will cost you $2 at most per single serving:

 

Cranberry Walnut Chicken Salad

Ingredients:

  • 2/3 cup slivered walnuts $0.26
  • 3 cups chopped cooked chicken $1.75
  • 3/4 cup dried cranberries $ 0.15
  • 2 celery ribs, diced $ 0.10
  • 1/2 small sweet onion, diced $0.15
  • 3/4 cup olive oil mayonnaise $0.20
  • 2 tablespoons fresh lemon juice $0.15

 

Southwestern Chicken Bowl

Ingredients:

  • 1 cup uncooked long grain basmati rice* $0.50
  • 1 cup salsa $0.65
  • 1.5-2 cups precooked shredded chicken** $1.50
  • 15 oz. can black beans $0.49
  • 1 Tbsp chili powder*** $0.30
  • 1 3/4 cups chicken broth**** $0.23
  • 1 cup dairy free shredded cheese $1.00
  • 2-3 green onions, sliced $0.26

Tandoori Chicken Kebabs

Ingredients:
  • 2 large chicken breasts $2.48
  • 1/2 cup basmati rice $0.20
  • 1 medium lemon, juiced $0.30
  • 2 cloves garlic $0.14
  • 1/2 medium yellow onion $0.16
  • 2 inches fresh ginger $0.31
  • 1/2 tsp salt $0.02
  • 1/2 tsp paprika $0.05
  • 1/4 tsp cayenne pepper $0.02
  • 1/2 tsp turmeric $0.05

 

Chicken and Mandarin Salad

Ingredients

Simple Sesame Dressing

  • 2 Tbsp light or neutral oil* $0.08
  • 1 Tbsp rice vinegar $0.12
  • 4 tsp soy sauce $0.13
  • 1 tsp toasted sesame oil $0.11
  • 1 Tbsp brown sugar $0.02
  • 1 tsp grated fresh ginger $0.04
  • 1/2 Tbsp sesame seeds $0.04

SALAD

  • 6 cups salad greens** $1.25
  • 11oz can mandarin oranges $0.77
  • 1 rotisserie chicken breast $1.50
  • 1/4 cup sliced almonds $0.50
  • 1/4 small red onion $0.14
  • 1/2 avocado $0.50
 My top 4 favorites, however, when it comes to meal prep cold salads are the most convenient when i’m in a rush or not accessible to a microwave. Hope you’ll enjoy these dishes as much as I do!
